Add a drop or so of rinse aid to drip tray water to cut down surface tension. Is that what you mean? Or am I way off? Not any kind of chemist just a janitor with some hobbies...

Probably..I read on one site Corrie White--> [link] that she uses different additives to try and slow action down. Make drops more viscous, I think that's the word I'm looking for.. You can get some pretty interesting drop collision.. If you have any suggestions I'd be glad to hear them, thanks..:)

I'm more theory and have had courses in it, so I may not be of much help. I looked on the internet, but everyone seems to think they found the secret to water drops and, so, do not give simple soln info. You mentioned you were using guar; that sounds good also try small amount of dish detergent and perhaps a load of salt or sugar. Alcohol and water mixtures will also work. If you use a flat dish use a thin water layer and a thin cooking oil layer on top and try drops into that you can add color with different colors and dyes both water and oil soluble. I'd have to think about different polarities and surface tension and interfacial tension for a while.
